I use OSX 10.8.5. At one point, my Scapple board lost its ability to access background colours from Mac’s crayon set and colour wheel.
Also, Scapple used to offer a drop-down board with a selection of styles for outlining notes.
I looked under the table and behind the sofa. They’re just not there. And I tried to cut-and-paste from previous notes, no-go.
I think they all vanished after a Mac software update.
Does Apple steal people’s crayons?

You may very well be describing a problem with the Apple colour palette that has existed since its inception. It has always been a bit flaky like that. If it loses “connection” with the tool or object you’re trying to set a colour on, just try closing it and then clicking on the background colour pot again.
So in essence, yes, sometimes Apple does steal our crayons.
Try right-clicking on a note. That is the easiest way to get to this list, but you can of course also get to them in the Format/Note Style/ menu, though that involves a bit more menu navigation, so I prefer the contextual menu.
