Compiling fonts into epub

Howdy, I’m writing a project in English which needs special characters (not necessarily entire font sets) for Arabic, Hebrew, Vietnamese, and Old English. I can see the characters on my Windows computer in Scrivener, but when I compile to epub, they don’t make it into the file, at least on my cheap nook. Is there a way to get these fonts to display in epub (and other e-reader file types)? Thanks.

Since I first posted this I have heard that nook is awful with fonts and I should use a jpg for occasional display of alternate fonts, and the kindle has a font list in their help pages somewhere, so I might be able to work with fonts in mobi files. Does this sound right to y’all? Thanks.
