I would like to code each corkboard card in a way, that keeps track of whose POV or character it is about. I tried the flags, but I can only put one flag on each card, I would like each of my main characters to have a different coloured flag or icon so I can see at a glance where the storylines go.

If labels aren’t working because you need multiple for each card, try keywords. You can display these on the corkboard by enabling View > Corkboard Options > Keyword Colors. Add keywords in the inspector (click the key icon in the bottom) or open Project > Project Keywords to create keywords for use in the project and then drag them directly to the index card or to the document title in the binder.
