Do you know if it is possible to switch to another app when Scrivener is syncing? To be more precise when the dropbox icon appears and is doing the syncing process?

Yes, that’s fine on macOS, as switching apps doesn’t in itself interfere with Dropbox’s sync process.

… On the Mac (or a PC). Don’t do it on an iOS device.
Macs and PCs have true multitasking, while iOS devices don’t. When you switch apps in iOS, the one you switched away from is suspended.
(Yes, I know this is the Mac forum, but it’s an important distinction.)
