Every time I drag a document into a folder the folder expands. Is there some way I can turn this preference off, or some key to hold while I drag the file so the folder does NOT expand?
This would save me loads of time.

Check in the Navigation preferences pane, there is a checkbox there called, Collapse auto-expanded outline items after drag and drop. If the folder expands when you drop (you have to hover over it for a moment for it to auto-expand) then this option should close it back up after a second or so.
Additionally, with that option enabled, if you let go of the item on top of the folder before it auto-expands, then it should never open at all.
