Is there any way to get Scrivener to extract the first sentence of each paragraph and put them in some sort of list? Thanks.

No, not unless you split your document to one scrivener file per paragraph (I doubt that’s what you want, though some people do this with non-fiction projects). If you did do that, then you could use the small button in the upper-right corner of the synopsis section of the Inspector to copy the first part of whatever text you have in the editor (I don’t know what triggers it to stop copying text; paragraph ending, or X number of characters/words…)
