How could one sort the items in the “Trash” by date / time?

You can (I just checked) view the items in the Trash folder in Outliner mode, and then add whichever date column is meaningful to you (created date or modified date), then sort accordingly.

I assume you want something like that, not by the date it was deleted which is what I think I see happening.
