I would just like to know how I set markers throughout my document and how then to… call up a list of markers to see which ones I’ve set, so I can jump between them.

The Insert ▸ Comment command is probably the best for what you’re looking for. You can tag any word or phrase with a selection, then use the command and type in the nature of the marker into the sidebar. As you add more, you will see they all show up in this list in the inspector sidebar, and clicking on them will scroll from one to the other. This works across multiple scrivenings too, if you have a bunch of text loaded at once.
