I use scrivener to compose articles which usually are published together with many others. So what I want is to be able to produce simple .tex files, which have absolutely nothing added at the beginning or the end as I include them into a big file which has everything.
Sure I am able to do this by hand but it would be handy to this in scrivener (a checkbox: yes/no for plain tex file) as I can create revisions of my article in scrivener.

Why can’t you do this already? You can use Compile Draft to export to plain text and you can set it up so that nothing gets added at all other than a single newline (or two) between each document. I’m not sure what you mean about the preamble - it’s up to you what does or doesn’t get included in the compile.

The preamble is a part of MMDs default settings for LaTeX output (i.e. memoir.xslt). The only way to strip it from the output, is to change the LaTeX XSLT file in Scrivener’s MultiMarkdown Settings (->File menu). Luckily, MMD comes with a file called latex-snippet, that does exactly what you want.
As I understand it, the op wants to write the LaTeX by hand rather than using MultiMarkdown, in which case he or she would be best exporting to plain text rather than MMD > LaTex.
