I am using UK Stage Play format for the first time. I was surprised to see that the menu at the bottom right of the screen does not include ‘Parenthetical’. How can I add parentheticals to this list such that they will be formatted correctly when I export to FD8? (I’ve never used UK play formatting before so I have no idea where parentheticals should be placed in it!)

UK State Play formatting doesn’t have parentheticals because that’s not standard in the format. Also, if you are going to export to Final Draft, I wouldn’t use UK Stage Play format, since the UK format has character names on the same line as dialogue, which isn’t something that Final Draft supports.
You can customise all script formatting via Format > Scriptwriting > Script Settings.
