The text in the print version of my Scapple diagram is much smaller in size than what I expected. Is there any way to prevent that from happening – or for Scapple to make me aware it will happen? I wanted all the text to be 12 pt.

Try disabling Scale to Fit One Page in the Scapple section of the print dialogue.
That solved it.
