when I type at a normal speed, Scrivener just stops showing anything. I think it’s still taking input, because after about a minute it rushes to update everything. But it also seems to lock everything else up as well.

I had the same problem. The Scrivener window eventually said (Not Responding). I couldn’t even exit out so I left the window up and went to do other things, though I checked back occasionally. Eventually (around an hour later) my words showed up.
This is a known bug and has been logged. It’s related to the spellchecking feature so if you turn it off it should reduce the amount of lag. It’s also been found that restarting Scrivener helps too.
