Actually, keyword sorting doesn’t seem to work at all.
Here’s an example from one of my projects:

You can drag/drop keywords to sort them.
As was mentioned, you can manually sort (which saves the sort order), or you can do a quick sort like this:
Ah! That works perfectly!
I missed the “click to sort” option at the top of the page. Just assumed that clicking in the sort a-z box at the bottom of the page would do it. Ooops/

NEVER MIND … I FOUND THE SORT OPTION IN SECTION 10.4.5 (Using Keywords) OF THE MANUAL … See ‘Prefer Alphabetical Sorting?’ that states … (courtesy scshrugged … see below)
“While the keyword list will leave the organisation up to you, it is possible to manually sort the entire list alphabetically whenever you wish to do so, via the Edit ▸ Sort ▸ Sort Ascending or Sort Descending commands.”
Neat the way it works … the trick is to be sure the Project Keywords list has the focus when selecting the Edit ▸ Sort ▸ Sort Ascending or Sort Descending commands.
Note: Although the Edit ▸ Sort ▸ Sort Ascending or Sort Descending commands work perfectly, I still don’t see a ‘sort box’ at the bottom of the Project Keywords listing as discussed in the Windows version. This would be a nice option to have available in the Mac version as well!
