I use a lot of bulleted lists and the default style creates too large a gap between bullet and text. I have formatted my bulleted list with smaller tabs and then saved it as a style. However, when applying the style to other bullet points, nothing changes and quite often when I return to the orginal bullet the tabs have reverted to how they were before I styled them. I have include both paragraph and character in the stles to save.

I’m a Windows user, so I’m unsure it works the same on a Mac.
Don’t Tab.
Use the Ruler, having first set the Ruler to snap every (your gap; mine is 0.25 cm). For Mac select your way to Preferences > Editing > Options.
Then use the bullets icon to apply the default bullets.
Next, adjust the gaps. My First Line Indent (top marker on the Ruler) is dragged to 0.75 cm and Left Indent (bottom marker) to 1.25 cm. Add this setting as a Paragraph Style in Show Style Settings. I call mine Bullet_L1. My next level of bullets starts at 1.5 and ends at 2 cm. I create another Paragraph Style and call it Bullet_L2.
On Windows, the bullets look pretty awful (bullets crunched close to the text) in Scrivener but render well and precisely when compiling to Word or PDF. Again, on Windows and for bullets, never start the First Line Indent at 0. Your bullets will look like a dog’s breakfast when you restart Scrivener.
Moving right ahead, first apply bullets, then apply the relevant Paragraph Style.
There’re ways to do the gaps through the menus, but I find working the Ruler easiest.
Applying second level bullets is a bit of a pain, but can be manipulated with the Format Copy and Format Paste buttons when the irritation levels start kicking in.
