When I open a Scrivener Project, is there any way to quickly navigate to the last added document ?

to the last added document ? (useful when I add a document via the services menu)
to the last modified document ?

Nothing super quick, but if you run a project search for an asterisk by itself, and then change the sort order in the search result header bar to “Date: Newest”, that should help!

If that’s too slow, because it is a huge project, then searching for “cdate:1d” will give you a list of everything created in the last 24 hours.
