Add a "checkbox" item, check it off, track it

I’d like to make some of my book notes into things I can track to completion. Is there a “checkbox” I can drop somewhere?

Or, other or better ways to do this?

No, but check this thread for some ways of working in Scrivener that do not require check-boxes.
