While my laptop was not connected to the internet, the mobile version of Scrivener synced to Dropbox, overwriting about a thousand words on my laptop. I’m trying to figure out how to go back to an earlier save, but I can’t find it. Help?

From here, it’s impossible to debug what happened with Dropbox. My hunch is that you have set it for “online” (or whatever nomenclature Dropbox uses). Perhaps re-read for guidance:
As for finding a “previous” save, better to go back to a previous backup. Backups are automatic by Scrivener and the configuration of when and how those backups up to you. As discussed in this forum and in the documentation, zip backups recommended. I keep 25 copies and create a backup on every “project close”. Some take more frequent backups and store more or fewer copies.
Just a thought, but do you know the file path yet? Can you search on all files that were modified at the time of the sync?
Putting Scrivener to one side, it looks like Dropbox has its own way of restoring previous versions of files. There is an article in their Knowledge Base, How to recover older versions of files. Any use to you?
