Is there any way to create a keyboard shortcut to go quickly to certain often-used documents? A favourites list, perhaps?

The one that’s compatible with iOScrivener’s “Bookmarks” feature, and which will be supported in one form or another in future paid upgrades (as far as I’m aware), is “Favorites”.
To add a document (or a folder) to your favorites, select the document in the binder and go to Documents->Favorites->Add to Favorites. There are other menu items there that might be of interest to you, fyi. You can also right-click on a document in the binder and use the “Add to Favorites” selection there.
To return to a favorite, use the menu “View->Go To->” and select a document from under the “Favorites” section of that menu.
