How could one do this: compare two snapshots of different docs / folders?

Not directly, but if you duplicate[1] the two items you want to compare, and then follow that up with Merge[2], that will produce a binder item that has both of the snapshot lists merged as well, and you can then compare them directly. Once you are done this item can be moved to the trash if you have no further use for it.

  1. The Documents ▸ Duplicate ▸ with Subdocuments and Unique Title menu command, or Ctrl+D / ⌘D ↩︎

  2. Documents ▸ Merge (Shift+Ctrl+M / ⌘M) ↩︎
