I am using the template for a Stage play. There is a notes Section in the Binder which follows the format of the stage play. Is there a way to add simple text documents to the binder for brainstorming, etc.?

The basics of how scriptwriting sections work in Scrivener is briefly addressed in the tutorial, under step 3, search for the “Scriptwriting Mode” heading. That will walk you through an example where you toggle the tutorial document in and out of script mode as you type (Cmd-8).
The behaviour is documented in the user manual under §20.1, Formatting a Script in Scrivener, starting on page 274, where the rules for how new documents are created is determined—but principally the above keyboard shortcut is what you need whenever a document is created one way and you wanted it the other way.
