I have created a template which I like. But whenever I add a new text to the project, It uses Currier New instead of my Body preset.
Not a big deal - but It’s kinda annoying. Is there a way to change the default apparence of a new text?

The default text formatting is a global setting, not specific to a given project. You can change it via Tools > Options in the Editor section; there’s some sample text and a format bar there to set it up as you like (the blue “A” button brings up the font options). Changing the default text formatting will affect all new documents you create in any project, and you can bring existing ones into line by selecting them in the binder and choosing Documents > Convert > Formatting to Default Text Style.
