The manual mentions this option in the situation of very large projects which may take longer to backup. below is the manual snipit and an image of the Backup options. Does the exclude from backup option exist in windows???

It is the checkbox “Turn on automatic backups”. Unselecting that will disable all options in the Backup Groupbox.

It may be the bane of the user @Fant’s recent problems.
As noted, the clue here is that Appendix C is entirely about the Project Settings window. It is Appendix B that discusses global options like how backups are created. Whether one project or another uses those settings is, and should be, a project-specific setting.
