Find and Replace one at a time?

Is there a way to make Find and Replace a one at a time thing, rather than global?

Say I have a character named Bob. And someone gets their hair cut in a bob. And then I decide Bob should really be a Robert. Right now, it seems like I can only make changes globally, and everything gets changed, both the haircut and the person.

There are two types of find and replace - Project Replace, and normal Find & Replace. It sounds that you have been trying to use the former when the latter might have been better. In you situation, it would be better to use the project search in the tool bar to search for “bob” (most likely choosing “Whole World” and maybe even “Case Sensitive” form the search menu, by clicking on the triangle next to the magnifying glass). This will find all documents containing this word, showing them in a list where the binder usually is. Then you just use the normal Edit > Find > Find… (cmd-F) to search through each of those documents using a standard Find and Replace.
