How could one change (slower / faster speed) the reading / speech / lecture time that is shown with the Reading Time value? Could that time be shown in the status bar ALWAYS?

Assuming you’re not writing for just one person or who will read your project it makes sense to pick the speed of the average reader.
Since it is an arbitrary number you can quickly decide a reading speed and calculate a number if your target audience is faster or slower than scriveners average. You shoot for a word target not reading time, so would only need to calculate reading time when done with the project.

I am not quite sure to understand. Maybe when done it’s too late. I would rather know well before the end whether a speech is within a certain time so that I can make corrections in time.

Just do the math. Are you talking reading or speaking time . If reading time and 3 minute speech then 900 words at 300 a minute or 1200 for 400 words per minute. Why not have scrivener read speech and time it . In tools under speech can adjust reading speed.
