I like sub-documents a lot and use them all the time on macOS. And I normally do most of my writing there and only a little fiddling on iOS (really iPadOS on my iPad Pro), but now that my MacBook is too out of date to run virtually anything new I’m trying to do more on my far more recent iPad Pro. Unfortunately, I can’t find any way to create a sub-document or take an existing document and drag-and-drop it onto another to make it into a sub-document. I can’t find anything in the manual about it either. I can work with existing sub-documents just fine in iOS/iPadOS to be clear, but making something into one appears to be a whole other question. Thanks in advance.
With the item visible in the main Editor (or Corkboard), tap the ‘+’ icon in the upper right. As in desktop Scrivener, this will create a new sibling for text documents, a new child for folder documents.
To relocate an item, tap the Edit button at the top right of the Binder. Select the item, then use the buttons down below. The “cross” icon lets you indent/outdent the item in the Outline, the arrow pointing into a folder lets you relocate the item to make it a subdocument of anything in the Binder.

This is an old post, but I’ll add some extra information in case anyone else came here from Google looking for an answer.
What no result I got could be screwed to do, was include the little tid-bit that: when using the folder-with-arrow button that you need to press to move a document into another, you have to press that extra thing at the bottom that says “Show All Documents”, or else it won’t actually let you add a subdocument to another document because it’ll only show folders. No, the tutorial doesn’t say this (not in enough detail to include this, which was exactly the problem in this case [in fact, the tutorial says nothing at all about actually making subdocuments, just how to open them]) nor seemingly anyone else, so if you accidentally overlook this detail or somehow don’t see it, it’s going to seem like there’s a dead end. For added context, I have only used the iPad IOS version so it might be different on other devices.
Here is the full list of steps to make a subdocument in a document (for IOS) for anyone who sees this in the future:

Press Edit at the top of the sidebar, then select the document you want to make into a subdocument (not the one you want to use as the container/parent document).

Tap the icon on the bottom that has a folder with an arrow on it pointing right.

If it only gives you the option to add it to a folder, the text on the bottom right of the popup should say “Show All Documents”, and when you tap it, it will expand the list to show all the documents in it, and you can just select which one you want to add it to. Done.
When the documents are shown, the button at the bottom will say “Show Containers Only” and when tapped it will go back to only showing folders.
