i tried to search every tab, but i cannot find this option.

This isn’t a Scrivener feature, rather your Mac has the ability to type in many different languages. So you would set this up in System Preferences.
I am guessing that the OP is not wanting to type in Greek per se, but just needs to use some Greek letters as symbols – as is common in math and logic.
So maybe they want the Character Viewer? Available from the pop-up gear menu on the Fonts palette (cmd-T). Or more directly from the keyboard menu bar menu (if enabled in Sys Prefs > Keyboard).
If Greek is not listed on the Character palette, you can switch it on via the gear pop-up there.
This is Apple’s system-wide provision for this need.

I’m trying to figure this out for Scrivener on iOS. Any suggestions? I just need to type the occasional Greek character (mu, sigma, capital delta, etc) and the occasional math symbol.
On MacOS this can be accomplished using the Character Viewer, as suggested in this thread. How to do this on iOS?
Settings > General > Keyboards > Add New Keyboard > Greek
Then switch in and out of the Greek keyboard as necessary. I can’t think of another way; others may have better solutions.

EDIT: It would have been better to post this in the iOS forum, rather than the Mac forum. Perhaps a moderator will move it for you.
In v. 3 (the current version), you can click on “Edit”, then “Emojis and Symbols”. I think this was also available in v2, but not totally sure about that. I just used this method to enter the Greek letter “alpha” in my manuscript.
