It is tough to keep track of my latest copy, because I’m always going back and forth between Indesign and Scrivener in a number of different projects.
So, I’m wondering if their a keyboard shortcut to add a date-stamp in the Binder’s Subject-Title field, or even in the content area.

This doesn’t directly answer what you’ve asked (don’t think that’s currently a feature) but maybe you’ll find it useful.
You could use a custom column in the outliner:
And there’s the Metadata panel in the Inspector:
The Mac has a system for that kind of thing. It’s called Automator: discussions.apple.com/thread/8651300
It would work for all applications on your Mac, not just Scrivener.
Most other solutions require a 3rd-party application, like Keyboard Maestro or Typinator. Both have somewhat easier ways of doing similar things, but requires buying software licenses. I do find KM to be quite useful, and so I found it worth the price. As with most non-App Store software, you can try them before you buy.

I never noticed that. Handy.
You can also add a custom keyboard shortcut in the Mac’s System preferences for Keyboard settings.
