In your iOS tutorial and in imported RTF files, links are highlighted with a blue background. I find this distracting, especially if a document contains a list of links, and would prefer not to have it. This only seems to be in the iOS app as links aren’t highlighted in the Mac app.
Is it possible to globally change this so that links are not highlighted (without having to find every occurrence of highlighted links and manually remove the highlight)?

As far as I know, there isn’t.
That’s a shame. As far as I know, no other iOS app formats links with a background like this, at least not any of the many apps I either have or have tried. For me, making a clickable link coloured (eg: blue) is enough to distinguish it from normal text; I personally don’t think it needs to be made so glaringly obvious by also making it highlighted.
Maybe I’ll post about in the Wish List forum, and “wish” that it could at least be an optional feature. There’s a setting to choose what colour to make the text of links, so perhaps there could be a setting to enable or disable giving links a highlight/background.

You’re welcome! Again, as far as I know, link color can only be changed in Mac Scrivener (possibly also Windows Scriv, but I have little knowledge there.) iOS Scrivener may honor the color change (but to be honest, I think it doesn’t. I could be wrong about all of this, you know. 
Please enlighten me if I am!), but there’s no way to affect it in iOS Scriv. Mac Scrivener doesn’t highlight links, so no control there to change link highlight color.
By all means, put it in the Wish List! The iOS God (aka KB, the sole Mac/iOS developer) might grant it! Then again, he might not, but you never know until you ask.

Whilst I’m still a Scrivener newbie, I’ve nevertheless looked everywhere in the preferences for both the Mac and iOS apps and there’s no option for this link highligh in the rather few options in the (sadly rather limited) iOS app and, as you say, changes made in the Mac app (mostly?) don’t seem to affect the iOS app.

In general, if a change made in the Mac Scriv app actually changes the project package, there’s a chance it will be honoured on IOS. But changes made that only affect how projects are displayed on Mac (i.e. most anything in Mac preferences->Appearance) aren’t saved in the project package and so won’t affect iOS appearance. Project Settings make it over, but they’re mostly ignored on iOS anyway.
Frankly, I almost never use iOS Scriv any more, as by the time I get my iPad packed with its cover, charger, and keyboard, I may as well pack my MacBook Air 11". I use iOS Scriv only when I’m having trouble getting started writing and use a third-party iOS handwriting keyboard to jumpstart my brain.
The Mac app is fantastic, like a sort of Photoshop for text in terms of how much it can do! I absolutely love the ability to track text via the outliner, labels and various other ways. I also like how it uses RTF, and not HTML or some clunky Word format like so many other apps do these days; so few apps seem to use RTF yet it’s lighter-weight and can be opened in many text editors, unlike HTML. I’m not a Markdown fan either and have no interest in littering my text with asterisks and underscores, etc, in order to format it.
It’s a shame the iOS app can’t do half of what the Mac app can, no doubt mostly due to iOS limitations; nevertheless, I use it for jotting something down or looking back through text in general, and then returning to my Mac to tidy up anything that might need doing.
But I’m afraid those blue highlighted links in the iOS app are still a bit of an eye-sore to me
