The Character Viewer/Emoji & Symbols panel on the Mac allows you to define Favorites.
Separate from that, you can also enable a Keyboard Viewer, which can be useful for accented characters like å. Settings → Keyboard → Input Sources, turn on the option to show the Input menu in the Menu bar. Then enable the Keyboard Viewer from the Input menu.
(This is also where you would enable alternatives to whatever your standard keyboard layout is.)
