In the Keyboard section of the Options menu, there are quite a few commands in the menu bar that aren’t bindable. Some examples include formatting lists, opening documents in Copyholders, and opening the Writing History panel.
I think systematically reviewing the commands in the menu bar and adding as many as possible to the keyboard shortcut options would be an excellent layer of polish before release.
