I have always had black text on a white background. I opened my document today to find I have a black background on which the black text does not show up.

Also check to see if you didn’t accidently switch to dark mode: (options panel still, bottom left – “Manage”)
“Default” is all light gray and white.

Options (which is under file in my version) to Manage to clicking on Default and restarting did the trick!
