I am using Scrivener 2 and am wondering if I will be able to open my Scrivener 2 projects in Scrivener for iOS?

Yes. iOS Scrivener is capable of reading all of the following: The latest non-beta release of Windows Scrivener (v1), The last release of Mac v2, Mac v3, and probably the Windows v3 beta (but I’m not risking that until it’s nearing the official release).
In short:
Win V1 = Mac V2 = iOS
Win Beta 3 = Mac V3 = iOS
Note that iOS does not translate between versions. Be sure to use only compatible versions of Scrivener on your non-iOS computers if you want them to be able to share a project via Dropbox.

Just so I don’t misunderstand, when you say iOS Scrivener is capable of ‘reading’ Mac Scrivener 2 - does that mean that I can edit my Scrivener 2 project on my phone, save it and later open and edit it in my Mac?
In other words, will projects work seamlessly back and forth between Scrivener 2 for Mac and iOS Scrivener?

Projects will work back and forth between Mac Scrivener 2.8.1 or newer and iOS Scrivener.
However, as noted, iOS Scrivener cannot convert the project format in either direction. A Mac Scrivener 3 project shared with iOS Scrivener will not become readable if shared from there to Mac Scrivener 2.
