removing author name from header

I’m submitting my MS to a competition that requires me to remove my name from the MS. That’s easy to do on the title page, but how do I switch off the function that places my name as a header throughout?

Also, is it possible to change the title of the work that appears as a header on every facing page without saving the entire project under a different name?

All this can be done under the “Page Settings” pane of Compile.
