Whats the best way to change the text in a chapter, but keep the original as a backup or alternative, to be compared for a later read ?

When I do that, I duplicate the chapter into the same project, rename it with a prefix “OLD_” and when I’m happy with the new version I delete the “OLD_*” chapter. I would not bother with project “save-as…” or recovery of backups, or other. Those methods will work, but complicated and probably confusing if not paying attention. Just me.
That’s what snapshots are for.

Check out “snapshots” in the manual.
It depends how deep of a rewrite you intend to do.
If you want to completely rewrite a chapter or part of and then reread them and decide which one you prefer, I’d use a duplicate of the document.
If you want to do some edits, I’d go with a snapshot.
And if you want to keep track of changes you make “live”, there is also the possibility to be using revision colors.
