As I am (finally) getting down to Scrivener, It seems that all the tutorials or guides out there are (understandably) directed at v2 since v3 isn’t “finished.”
Would the v2 tutorials be worth it or would they be too far off from where v3 is headed?

The biggest differences are in the Compile command, so I’d recommend deferring those tutorials until you have an actual need for them. In most of the rest of the program, there are some new features and some menu items have moved, but the fundamentals haven’t changed much.
