I’m looking at the different paragraph styles in my document… Title, Heading 1, etc. But there’s no “Body” option so once I choose a heading, I can’t get back to body text without a laborious process.
There’s no clear way that I can see to edit the available options here. Am I missing something?
Yes there is no Body Style (as you might expect from word processing packages that support styles). “No Style” is what should be used everywhere except where you need a specific paragraph or character style.
Rather than repeat everything, take a look at Chapte 17 of the “Scrivener Manual” where all this explained.
@rms I hate that Scrivener does not have a fully developed style system. I come from the SGML world and there everything has to be marked up (including body text).
Long ago I defined my own equivalent of Body calling it Conventional Text and set it to be the default for the following paragraph to get around this serious (IMO) deficiency.
Harsh word. Yes, it’s a different world, Scrivener is. Hence section 17.1 entitled “Think Different”. As I’m sure you know, the power of Scrivener for formatting is in the Compilation part, not the editing part. Design Basis.
When you are editing a text, any formatting presets, like Heading etc, are behind the Paint Brush icon on the top bar.
If you have synced a project with a desktop version, then they will be the same styles in the project: you apply them by selecting a paragraph, hitting the paint brush and choosing a style.
But, just as in the desktop versions, the default ‘No style’ paragraph is set elsewhere: click on the paintbrush and you’ll see a link to ‘Formatting Options’. Click that and choose either ‘Set Default Formatting’ to change the default to the current paragraph format, or ‘Use Default Formatting’ to reset the current paragraph format back to the default.

Not a stupid question! Select some text, pick the Paintbrush icon at top, pick the “Style” tab. In iOS Scrivener the way to get “no style” is to change the selected text to “Use Default Formatting” under the “Formatting Options” link on the Styles tab dialog box.
